Guillon Whisky Distillery is in the Champagne region of France. This area is known for champagne, not whisky. The distillery focuses on making high-quality whisky in this unusual location.
Their whiskies are unique. They blend traditional whisky methods with the special features of the Champagne region. The distillery pays a lot of attention to ageing. They use casks that once held different wines. This affects the flavour of the whisky.
Guillon makes various whiskies. Each one highlights a part of their process or a specific flavour. They are careful with distillation and ageing. This makes each bottle special and memorable. Production process
Malt is produced in the Champagne region, 50 km from the distillery and transformed on site. The particularity of Guillon's spirits comes from both the use of a special yeast from the Champagne region and the duration of the fermentation step. Indeed, while the fermentation of most whiskies lasts only a few days, Guillon's fermentation lasts 4 weeks.[citation needed]
After that, it is distilled twice in copper alembics and then diluted using spring water. This water comes directly from the source close to the distillery.[citation needed]
The maturation process lasts between 5 and 10 years. Almost all spirits are finished in special casks that previously contained French wines
